A quarterly event on a Wednesday evening with four courses by The Castle’s Chef and four paired unique cocktails developed by The Castle’s Mixologist Mark Brockway. Mark explains why the cocktails enhance, complement or contrast with the flavors of the food and describes the process of making infused syrups, balanced drinks, etc. A ticketed event at $40 per person, inclusive.

Course 1. Apricot and Jalapeno Jam Flatbread Bites. Served with Sleigh Ride Sidecar-Four Roses Bourbon, Frangelico, Satuma-Honey Syrup & Fresh Lemon Juice

Course 2. Apple & Pear Salad w/ Mixed Greens, Pecans, Feta and a Pomegranate Vinaigrette. Served with Santa’s Clausmopolitan. Ketel One Citrus Vodka, Luxardo Cherry Liqueur, Mixed Berry Syrup, Fresh Lime Juice and Topped with Sparkling Wine.

Course 3. Beef Tenderloin with a Garlic Cream Sauce and Bacon Cranberry Brussel Sprouts. Apple Cider & Ginger Old Fashioned w/ Plum Bitters. Elijah Craig Bourbon, Domaine de Canton, Spiced Simple Syrup and Plum Bitters.

Course 4. Course 4. Chocolate Gooey Cakew/ Cinnamon Butter Cream Frosting. Served with Bal’s Chai Christmas Cocktail-Fresh made Chai w/ Frangelico, Allspice Liqueur and Hoodoo Chicory Liqueur topped w/ Godiva Dark Chocolate Whipped Cream
